93 is a colder fire and burns longer, this will help to stop spark knocking.

Are you running 87 and 93 under the same driving conditions? Since your car is tuned for 87, you should not get any benefit out of running 93. The only thing is that it wastes your money. If you get your car tuned for 93, you cannot run anything less, otherwise it will knock. Many people think that 93 burns cleaner and whatnot, however that's just the additives that each station adds to the generic fuel. Just try a search on octane grade or something similar to get about 20 posts.

ran 87 first take b/c the dealership only uses 87. salesman told me these cars are only tuned for 87. i told him he was crazy. been running 89 since. when i get it tuned it will be for 89 and 93. noticed a lot of diff just in the 87 to the 89 can only imagine the way it will run on 93.

In the manual, it specifically says to run the stock GT on 87. It goes on to say that running it on anything higher is detrimental to the engine.

But I am a mustang noob,
