When I started in with my '04 GT a couple of years ago, job one was battery cables.
After shopping around a bit, I found the best deal to be at the Ford dealer. The kit included both positive and negative cables terminated to the correct length.
Also included was the lead from the oil pressure switch to the connector near the battery.
This cured both a fluctuating oil pressure gauge and wasted terminals.
Thank me later.

That one is described as "positive" and looks like it has the alternator leads plus the positive cable.
It's one of the rare times I make (made) the trip to the dealer. The counter guy didn't have any trouble identifying the part I needed.

That is one of my favorite colors on the mustang too.
Most of the things you listed aren't too hard to fix/replace. If you're willing to put the time and effort in, this could be a great fun project for you.
