That's because you have to let your engine warm up. After you first start it the engine idels at 1000-1200 rpms for like 30s to a minute, but after that, the rpms drop to 750. This happens becuase your engine is cold and the fluids have to recirculate back through the engine. So if you want your engine to last, let it idel down first before you drive, like in other words, don't put the key in, start it, and two seconds later put it in gear, no the best thing in the world to do, because it will come back to bite you in the long run.
