Single port: Single set of small runners in the upper intake, air enters the TB, travels to the back of the manifold, then is sucked into their ports, then on itsway to the lower intake

Split port: Dual set of high flow runners/ports. Air enters the TB, travels down a wide port, to the top of the intake, then the air is split down two large ports then travels down those ports and air is sucked in from that port and goes on it's way to the lower intake

How difficult is it to switch over to the split port intake if you have the single? Or is it completely out of the question without major engine work?

Not difficult at all, just requires a lot of time, and a little cash. There are split port intake swap kits out there, but to make a long story short, you need everything that sits ontop of the engine, minus the cam, so that's heads, intake, gaskets, wiring harness, and a few other things.

So, unless I find a wrecked 99-04 v6 nearby this is probably out of the question for my girlfriends car

No, as I stated, you can find the parts online from a couple of undisclosed locations, however it is a mod that should be done "properly" for maximum gains, and by that I mean porting/polishing.
