Can anyone tell me the advantages and disadvantages of removing that cats from my 01' v6?

Advantages(In My Opinion) :
Car will most likely have a deeper tone, you might like it better then what it is now.

Disadvantage:
If you remove them and dont like the sound, there already gone and i dont think you can get cats put back on, but if you can would probaly cost a pretty penny, could be wrong.

high flow cats ftw

advantages: sound, you can scrap the cats for a couple hundred to pay the exhaust off[&:]

disadvantages: failed emissions, sound, car could backfire at WOT,

A Ford Small cat sells for $40 each right now, I think yours has 4.

The sound is a lot more agressive and if you have supporting mods you can gain a little power, stock its not worth enough performance to care. High flow cats are a great way to go if you want a little more sound and a sliver of performance.

Now, it is a federal law that you must have cats on your car, not to mention you are killing us slowly by not having them, still are killing us slowly with them but not as quickly NOX is bad shiz, another reason to keep air injector too.

If you really want to try the game without cats then I suggest buying a 94/95 off road X-pipe, have a muffler shop fit it to your exhaust manifolds (good time to install 94-97 headers or 99+ aftermarket headers.)

That way you can go back to stock when you need to.

Here is a sample of my BBK offroad X-pipe in the 96' (Its a 2000 engine w/ 94-97 headers)
No mufflers on this car, I have Borla now but havnt taken a new video clip yet.
