Default FI Mapping???

I was talking to someone that had the same car as I did (04 V6) and he said I could take the car to a high performance shop and let them remap the FI and transmission for under $100. Once done right, the car would be a monster on the street. He said from the factory the engine is only using 60% of the power it could have and after, that car could go 160mph and have awesome acceleration. I'm finding this to be a little over the top... is this true?

Oh, he also said to get to 160mph I would have to remove the governor since the top speed on the v6 was 126mph.

So far everything they've told you is a lie. What he's trying to tell you is called 'tuning'... or 'dyno tuning'/'handheld tuning'. It's done by changing the computer to control the air/fuel ratio. On a stock car, you aren't going to get much power at all.

It's a lot more than $100 to go 160 in a V6 Mustang. Just taking off the limiter won't do it. You need POWER, aerodynamics, the suspension, weight reduction, wheels/tires, brakes and a lot of other stuff.
