open the radiator cap and see if the fluid is circulating while the car is on. if its not i might think the thermostat's not opening

Change the T-stat to a 180, and bleed the cooling system by the manual...

EDIT...
What EXACTLY did you do to fix the head gasket???

If you're not leaking anywhere and you've fixed the water in your oil (or the oil in your water) then the only thing left is the thermostat or the water pump. Do what Jugador said.

after you refilled the radiator did you start the engine let it run for about 15-20 minutes..rev it up once in a while (with the cap OFF)? Sounds like you also have air in your coolant but if you've done everything then the only thing left is a water pump as long as you're positive about everthing else. Water is circulating?...the only thing else to do is test you t-stat with a gallon of 200 degree water and put your t-stat in it and watch it open so you know for sure it is working.
When it over heats....does it boil over? does it back into you coolant recovery? You might just have a bad senting unit.
In other words when the gauage says it's hot is it really HOT?

if you changed the t-stat, you probably have air in the system.....or your waterpump is shot.

do you have a temp gauge to keep track of when the tstat opens etc? that REALLY helps

If you dont see anything leaking when the car is hot you should be ok with no leaks in the radiator or hoses. Air in the system will cause for it to run hotter bc it assumes the "air pockets" are still water and will close off before it gets all it needs to get...so bleed the system FIRST
