Not an expert but I do work on cars..
At our shop whenever we do head gaskets we make every attempt to sell the hoses. I'd replace all of them if I were you.
Now on the heating deal.. you could have air trapped in the system.. common but again you should of had the thermostat replaced at the gasket change. I've seen that sometime when you expose the thremostat to elements they sometime quit working.. For all we know that thremostat is why you lost the gaskest in the first place?
I'd just go ahead and replace Hoses & Thremostat.. bleed the air from the system and you should be good to go!

EDIT.. make sure your fan is working.. slect the A/C and see if the fan works.. didn't think about you having a fan problem.. sorry!

thier goes my cai money.........but this is more important........yeah i have a oe ford replacement ball bering t-stat and i have to get some gasket seal to go around the t-stat housing.................why would the fan hit it though......maybee ill put a walcher on the nut so it 's not so close to the radiator..........do they make aluminum radiator hoses or no????
I've had t-stats locked open and locked closed for no apparent reason. You could have stuff floting around from your head change. Air in the system is usually the culpret. I'd change out the hoses and t-stat anyway. Let it come to temprature with the cap off..rev it several times..not enough to make the water come out but enought to make the water move faster...turn it off let it set and do it again..put the cap back on and drive it. See if it over heats again.
