If you have the V6 (which I'm guessing you do, since you posted in the V6 section)... I wouldn't go anything over a 50 shot until you rebuild your internals...
I run a 25-40 shot, using the Sneaky Pete System from NOS. The bottle is relatively small (holds like 1.2 lbs of nitrous, or something like that), and can be fit neatly up under the dash... it's a small bottle, so you really don't have the fire/explosion worry...
The only problem I have with the system, is how quickly I go through it... I am definitely planning on going with a larger trunk mounted bottle in the near future, but that's just so I don't run out...
Unless you plan on doing the forged internals thing... I'd say just go with any dry system, mount it into your intake and you'll be fine... I don't see a real point in doing a wet system install if you're not going to be using higher than a 50 shot.

how much boost? well a 25 shot gives you about 25 horsepower... a 40 shot gives you about 40 horsepower... (so basically 10-20% increase)
What other mods should you get? - Search the forums on this one. There are too many to simply list. What you do is up too you.
If you REALLY want to make this a fast car, start by making yourself a plan. List everything you want to do to the car (whether it is currently available or not) and start thinking about the order things need to go in. Work out different stages that all need done together.
For example, my next few steps will be: Having Dual Exhaust run, changing out the K&N for a CAI (not sure which yet), and replacing the sneaky pete nitrous system with a larger bottle (that 1 lb bottle runs out too quickly), then I'm off for a dyno tune. That will be followed by swapping my gears out for the 4.10's and adding the trak-lock rear end. I could keep going, but I think that gives you the general idea. Figure out how far you want to go, and then make a plan to get there.
