Ok just to throw this one out here. I have been thinking about the driveshaft to, cause of the power, plus you can get rid of the speed limiter to. But what about the alumium flywheel to go along with it. I dont even know if they make one for the v6s but I mean would it be worth it

Replacing the driveshaft for 'better fuel economy' will not likely pay for itself. The savings aren't there.

The best thing you can do for improved power and fuel economy is to get a custom 87 octane tune, probably with a mild cai (like a K&N). A good tune will improve your mileage and a CAI that doesn't take more fuel will help the car breathe better, along with a different muffler.

When I had a CAI (and dual exhaust) and custom tunes for it, with the 87 octane tune, I picked up 1.5-2 mpg highway at 75 mph. Of course custom tunes with higher octanes wont do as good.
If you want to save a little weight, remove the 5-lb weight blocks on the ends of both axles!
