Yes, they will.
They will set in a little farther, 1/2' or so,as the off-set of the S197 ('05+ Stangs) is greater than the SN95 ('94~'98 Stangs). If your current wheels are 7' wide, the face of the wheel will probably be in the same location relative to the outside of the fender.
To confirm this, measure the back-space ***HERE*** of both wheels and do the math.

There were 20' wheels on the '95 you just bought?
I would think there would have been a least a bit of rubbing, especially on the fronts. 245/45/17's are a good fit for an 8' wheel. I ran 245/40/17's on my '85 Stang and was a pretty firm ride due to overly-aggressive shocks and lower series tires.

255/35/20 tyres. No rubbing, just plenty of ugly.

I am surprised as I know of a New Edge running 20's up front and rubs quite a bit.

I think the off-set of the SN95 Stangs is +35mm up front. That means your NEW wheel will sit inward 10mm (or about 3/8") so see no need for any spacers as you will have this additional room under there.
Install them and completely turn the wheel both directions and measure clearances PRIOR to driving car to make sure you don't hit brake lines, fender, liner and such.

I run 245/40-17 on my 95 and they ride fine for me. You dont want to go any lower than 40 series in my opinion.
And i attempted to install some R1 wheels and had problems with the wheels rubbing the front caliber (due to the offset)
But with the 07 GT wheels you should be fine.
Jazzer is always on top of things. lol.
