running water in the coolant system is a common cause it causes rust in the system and the next thing you know you are replacing freeze plugs or in my case breaking of water pump bolts

The way i understand how the pressure sensor works is it is more of an on off vs actual pressure. Best thing to do to verify if u have pressure or not is to install an actual gauge. My press gauge was doing the exact same thing and it was the sensor. I bet u got a defective sensor and it went bad already.

I've changed the sensor twice. But then again, when I do change the sensor, it stays right in the middle for a few days before doing the whole dropping under acceleration thing.
