Why would you need to rev it high with 4.10's? You're probably going to make peak power at about 5500ish. Steeper gears will get you into the torque range quicker.

You have the right idea about gears due to the altitude that you are at. I'd use a 650 CFM carb and jet it about 3 size smaller than what Holley's factory put in it.
With a 650 you will have good throttle response, a 750 won't get you this no matter what jets you have in it.......
