Personally, I think it would be very difficult. You may be able to build the car to out-handle a new GT on smooth roads, but you'd sacrifice a lot of driveability that the new car still has. It's a heavier car, but the weight balance is better and it's got 40 years of technology behind the suspension
If you really want something to out-corner a new GT, get a fox body. Give $10k to Maximum Motorsports for suspension/chassis upgrades and you'll basically end up with a race car. It won't be as pretty, but it'll be a much better open track car.
