Hi...newbie here needing help in selecting a carb that would go with a weiand stealth to make a 65 stang have some zip on the road and hold its own at the green light...

I don't know if you have considered it, but the autolite 4100 is one of the best designed 4bbl carbs and a perfect match for the 289. There are two versions, one with 1.08 venturies (460 cfm) and one with 1.12 venturies (600 cfm). 1.08 excellent for stcok motor or mild cam. 1.12 if you have alil more juice to the motor, i.e. larger cam, headers etc.
The body is a one peice design, so you don't have problems with leaking fuel bowls and it is very easy to adjust, maintain and rebuild if req'd. Also hooks up to stock choke tubes from the stock manifolds. You may want to do a lil more reading on them. Just another option.
Good luck.

Some more engine specs are necessary. For a stockish 289, you only need about 500cfm. For something that's going to turn higher rpm's (well above 6k), you'll want to bump up to a 600.
Personally, I stick with Holley Double Pumpers for tunability and absolute control of the secondaries. They will produce more power and efficiency than an Edelbrock or Autolite/Motorcraft just because of this tunability.

I like Holleys too, but for a daily driver I like the vacuum secondary over the DP. They are tunable as well, and you can limit the secondary opening or make it come in faster with springs. Just depends on what youwant to do with it. Still the 4100 carbs I have worked great, started easily and ran pretty well. Mine were all on Clevelands so I dont know about a 289 enjoying them.. but why not..lol..
For a holley I woudnt go over a 600, but it would be a better idea to have center hung floats and dual fuel inlets rather than the transfer tube. And in that small of a carb, that means double pumper. All of my vacuum carbs are 750-850 cfm.. WAAAY to much for your engine..

I run an matching Edlebrock Preformer intake and Edlebrock 650 Carb. I'm no where near stock but I'm also not on the eratic side either.
As others have said, stockish = 500-600 cfm. Mild cam, headers and decent intake = 650 cfm or so.
Over carb on these small blocks ( or any size for that matter ) is worse than not having enough carb.
