Can someone help explain the difference between a fastback and sports roof? Thanks

Same thing, two different names.
Ford called them sports roofs ,we call them fastbacks.

The name change came with the '69, along with the the little rear seat windows on the sides.

Well, it's been diluted over time, but when the "fastback" roofline first appeared in the 1930's, it meant that the roofline went all the way to the rear of the car. From this standpoint, the only real Mustang "fastbacks" were the 67-68, and 71-73, barely. Anyway the word "fastback" has an actual technical meaning. "Sportroof" is purely a marketing term.

fast·back
   /ˈfæstˌbæk, ˈfɑst-/ Show Spelled[fast-bak, fahst-] –noun
1.
a form of back for an automobile body consisting of a single, unbroken convex curve from the top to the rear bumper.
2.
a car having such a back.

Yeah I own a 69 but even though marketing calls it a sportroof. I refer to it as a fastback most of the time.
