Default Which spare with 15x7 f & 15x8 r

I have
225/60/15 on 15x7 front
275/60/15 on 15x8 rear.

What one should I purchase for my spare, 275/60/15 on 15x8?

Will the 275/60/15 fit on the front without rubbing the fender? If so, I'd recommend that. You don't want to risk burning up your differential with mismatched tire diameters on the back if you ever have to use the spare.

Now thinking about it, isn't th 60 the most important measurement? 225 or 275 shouldn't matter, right?

Well the 275 is quite a bit taller at 27.99" compared to 25.63" sooooooo I doubt you will be able to but that on the front since it's so wide and make it home.
I would keep a narrower tire around 26" tall to nurse you home. You can't have it both ways when you run staggered tires.

225, 275 is the width and the 60 is the sidewall ratio.

I would just carry the spare that matches the front. If you have a rear flat, use the spare to get off the road or somewhere nearby. Then get someone to get the other wheel from the house so you can drive home.

Just add road side on your insurance have the car towed to a shop or home on a flatbed.
