Default 1968 Rough Idle and RPM Drop When Accelerating

I recently replaced the manifold and collector gaskets on my 1968 Mustang to try and fix an exhaust leak. After the procedure I started the car and the leak was not fixed. The car also seemed to struggle to idle for some reason. When reved it would spit up through the carburetor and stall. I took it for a spin and found that when I would push the accelerator about 3/4 of the way down, the RPM would drop and act like it was being choked off some how. I was told that could be caused by the exhaust leak. Someone else told me it could be caused by a vacuum leak. Neither of these people were "Mustang specific" so I figured I come to a place where people are "Mustang specific." I have since tried to reinstall all the gaskets and tighten down all the bolts repeatedly with no success in fixing the problem. Any help would be great! Thanks for any feedback.

Have you verified your ignition timing?

did you toast a plug wire when you did this i would start there and ck all the plugs also i cant think of anything you would do working on the exhaust other then plug or wire problems.

Thats exactly what I was concerned about, I have no idea what I could have done to mess it up by just simply changing exhaust gaskets. I'll check the plugs though. Thanks for the advice!

I honestly have no idea how to do that, this is my first project. I'm new to restoring cars and I'm learning as I go.

Have you bought a shop manual for the car? You need to, it will cover the basics.
