Help me BUY a mustang...
Found a convertible GT V8 for 11500. 122,000 miles. My first time to buy and I just didn't know if this was advisable with this high of miles. It is an AUTO...no choice, my wife says so

That's way too much for that amount of miles.
Search around using www.autotrader.com, if you willing to travel up to hundred or couple hundred miles to purchase one, you can save hundreds if not thousands.

I would pass and keep looking... That high of mileage means that the question is not if, but when you will have to put additional money into the car for repairs, such as plugs, belts, etc... Chances are the seller might not be able to answer when these were last done and you would be smart to take care of those right away if you are not sure of their last replacements...
I purchased my 2005 about a year and a half ago with only 5,800 on the odometer... Low mileage cars are out there.

That's a lot of miles for $11.5k. Offer $8k and if they bite, put the $3.5k that you saved into funds for mods and repairs. If it was taken care of, it shouldn't nickle and dime you for at least another 40k-50k miles.

Their asking price is pretty much exactly the Kelley Blue Book value for "good' condition. That's probably where they got it. A lot will depend on the condition of the top as that can cost a few grand to fix. There's a lot of other things to check. The A/C should work, check for signs of painting which could indicate an accident, and look to make sure the gaps in the body panels are all nice and uniform. Feeling the edge of the doors, hood, trunk lid, and fuel door for any roughness can indicate repainting. A sticking door on a convertible is a very bad sign that it got a big impact. I don't really consider things like brakes and tires a big deal but can be a good way to negotiate down the price if they need replacing. If you don't find anything obvious, pay a mechanic to give it a good inspection for anything that needs fixing.
The early 2005+ convertibles had an issue with the window hitting the edge of the top and gouging out the edge seam. My 2006 had that problem and they replaced the entire top under warranty. That would be an expensive fix out of warranty.
