New clutch, engages extremely early
Just finished my weeklong clutch replace, and I pumped the clutch pedal around 300 times and added more fluid and I hear the clutch engaging and disengaging. So my next step was to see if I could change gears. I can. I go to pull out of my complex, and let off the clutch pedal very slowly, and you can hear the disc catching the flywheel, then it immediately drops rpm and stalls. Any advice?

More RPMs and the stall will disappear.
Did you do all the proper measuring for
clutch distance to flywheel.
OEM or aftermarket clutch assembly?
or try this
point uphill at a 45 degree angle or more
pump till system is bled
will not completely bleed on a flat surface...

Are you giving it enough gas?
When I had my clutch replaced out, the clutch engaged really low to the floor and very quickly. I stalled out a couple of times. I had to get used to it.
Gradually overtime, the clutch would start grabbing a little higher, which felt normal.
This also happened when I had my Wife's clutch replaced in her old VW Passat.
