Keep in mind on the kennebell site their graphs are starting at 2,000 RPM. Just by way of keeping them honest.
Yes, that is where the boost kicks in, which is basically as soon as you step on the accelerator. What is your point?
Well Mr. Snippy... my point is their graph starts at 2,000 rpms. So when people look at that graph they need to know what they are reading and not assume the axis is at 0/0 which is what people are used to seeing a dyno pull chart read. This is important to know esp. given that some older cars made their torque at lower RPM.

my car is a 289 v8 (bigger than the 281 which i beleive is the new v8 motor, im kinda rusty on my new car facts) My car (which is hte lightest production mustang ever) will handle just as well as the new stangs

If that is a photo of your car, it is a beautiful car. You should be proud. However, if when you say that it "handles" like the new stangs, you are saying that your 40 year old leaf spring rear and double wishboned soft sprung and unbalanced Falcon framed antique (with 14 inch wheels, or 15?) can take turns as fast and smoothly and in control as a new mustang...then you destroy your cred in a heartbeat.

lol, it has no where near original suspension, dont get me wrong, its a restomod. only new mustang ive driven is a v6, and i would say safely that it handels equal to my 65. I've had the whole suspension redone with updated parts.
EDIT: ya they are 15s

I owned a '69 Z28 and a '78 Trans Am. They couldn't hold a candle to my '06 GT vert.
