Don't use saddle soap on the leather it will eat the paint right off of them.

The cleaner wipes(your choice of brand) work well to clean the dash surface and if you'd care to dress the dash(I'm not a big fan of shiny surfaces) most protect-ants are okay. For the aluminum trim, I just used a very soft towel and some mild cleaner(soapy water works well since it removes oily hand contact). I also use Meguiars leather wipes to treat the front seats and since the rears are vinyl(as well as the fronts seat-backs) Armor-all wipes work fine. In all my years of detailing cars(I do it on the side for extra cash) the most important area for maintaining interior new-car smell is to keep the carpeting, floor mats, headliner and if equipped with cloth upholstery, clean. Can't stress enough that a clean interior is a germ-free interior(at least not as germ-infested) and if you have kids, this will help them(and you) get less sick with colds/flus etc.. My friends think I'm nit-picky, but when they ride in my car, they always comment on how "new" the car seems.
Headliner? How do you clean the headliner without risking making it sag in the future?

For most of my interior I use Meguiars Quick Mist & Wipe Interior Detailer. It's good on interior plastics, vinyl, rubber, metal and even audio equipment. For my seats I use Malco Leather Conditioner. A friend who details cars uses that on all the cars he does. So far it's worked great for my leather seats.

I would if they are leather to keep them from drying and cracking.

Headliner? How do you clean the headliner without risking making it sag in the future?
Use a very soft bristled brush(similar to what the barber cleans your neck off with after a haircut), you'd be very surprised how much soot collects in the headliner, and as suggested, some febreze wouldn't hurt.
Just avoid staining with soaps or carpet cleaners that are too harsh(do a little spot testing if necessary).
Getting the headliner wet on a repeated basis will cause(eventually) the adhesives holding the fabric to the foam liner to come apart, so yes, I see your concern.
