Well, you can't just let out the clutch or the engine will die. It comes down to timing and giving just enough gas and releasing just enough clutch without putting any real load on the clutch. I used to drive in bumper to bumper everyday when I lived in MI and almost always drove a manual. Never damaged any of the clutches in any of my vehicles.
As far as riding the clutch on an incline, I'd recommend against it. You may not notice wear but it will burn rings in the clutch over time. It's best to practice taking off without rolling back. I learned to drive in the Blue Ridge mountains in GA and you can take off on an incline without rolling back.
