I looked into it a while back, but my local speed-guru said that going to an Al flywheel would hurt the 60ft time in a typically modded stang. The reason is the cast iron unit has lots of inertia so when you drop the clutch (from a stop) a lot more energy is immediatelytransferred to the drivetrain giving you quicker off the line acceleration. If on the other hand you're more into road racing, then the Al flywheel is the way to go.

I'm running an aluminum flywheel and my mid range acceleration feels a bit faster and it does rev a bit quicker. My revs don't drop that bad on launch or between gears.
