RE: How
You are resetting this every time you fill up, right? It calculates over the last 500 miles of driving. So the mileage estimate is based on that. not your current mileage. Every time you fill up you need to reset every one of those numbers. Gallons , Trip, MPG, etc... If you never reset it , it wont learn to average it out.

RE: How
^ exactly.
You need to do a reset for both the Trip and the MPG and drive for a whole tank of gas.
Although some problems do exist where the fuel guage doesn't show the correct amount of fuel in the tank

You shouldn't be worried about running the car to empty anyway. It's not good for your fuel pump. Remember it's in the tank and the fuel keeps it cool. Some say this is a farce but from my personal experience it seems to be true. My Dakota pickup had 257,000 miles on it with the orginal pump. My Caprice has 196,000 with the orginal pump as well (daily driver) I never let any car run below a 1/4 tank.

Although, one time on the way home from a long trip I was in a bit of a pinch for gas. The computer had calculated about 15 miles left til dry. I had about 10 miles to go in order to get to the pump. When I pulled in, I had about 6 miles left still. It over calculated or maybe my "gas saving" skills made up for it. Either way it was pretty close.
Besides that one time, I really never use it. I only use the average mpg on which I tend to reset everytime I pull out of the driveway to monitor my driving habits for the day. I check the fuel guage to see when it gets below 1/4. I then head to the pump next chance I get. I don't like to worry about making an emergency trip to the gas station before a trip or especially before work.

Mine is typically around 420 miles to empty after I reset but I drive conservatively. If you are a WOT type guy ALL the time, what are you worrying about mpg for? It's going to be crap anyway. Just watch the fuel guage so you don't run out.
