I'm having the Whipple HO Polished Kit installed in a week or so as many of you know, and my question is that, I was told by someone that I have to send off something from the car to Ford so that they can recaliberate it and then send it back? I thought that all was needed to be done was to upload the tune from the tuner that comes with the kit?

Whoever told you that is wrong... If he had told you this about a decade or so ago, he MAY have been right, but not now. all you need to do is to upload the tune from the flash tuner.
