Default Tire sizes for lowering

I was thinking about lowering the Mustang with Eibach springs or Ford Racing springs. I was wondering if I could keep 295/45/18 tires in the back? Would they fit?

You'll have no clearance problems - I have Eibach Pro with 295/45/18:

No problem! I have 295/30/20 on the back with Eibach Pro's, lowered the back 1.5" and didnt have any clearance issue! So... lowering .75" with the 45's should be fine! Good luck!

You need drop springs and I'd get eccentric bolts to get it aligned properly.

You'll need a front end alignment.

Other things you may want to get are adjustable panhard bar because your rear axle will move towards the drivers side when lowered. Lower control arm relocation brackets because traction will suck when the lower control arm angles change from the drop.

Dallas Mustang has this set up on their page. Would this be a good kit?

Is that just for the springs? You can find a Pro-Kit for about $240 pretty much anyplace else
