With my 2011, even with everything on, I can get a decent amount of wheel spin.
Also, with the 2011, the steering is much more sensitive in Sport Mode...it's also harder to turn the wheel..feels more "old school", which I like.
The TC on my 07 felt "dumb" (had one response..bogged down the car) compared to this car...this new system hardly gets in my way.

That's part of how stability control can drag your car back to the heading it thinks you want (but aren't getting for some reason).
It's sort of "piggy-backed" on the ABS system, which has the capability to independently apply individual brake(s). It can even activate the brakes at only one specific wheel.

Have all options available on '11 GT MT with Brembos, some comments:
-I engage sport mode every time I'm in the car. Way better driving experience. You can hang the back out pretty far, but It *may* still save your bacon if you get too far out of shape.
-You can engage sport mode while moving, just need to touch brake enough to turn on brake lights.
-Full off requires car to be stopped.
-I find that sport mode will sometimes step in and ruin the party even when traveling in a straight line if you are accelerating hard. The accelerometer seems to not like the aggressive gear shifts, interprets them as a heading problem and dips the power.
-The double tap has to be quick, like two taps within a second. Frustrated me before I figured it out. Just kept turning traction control off then back on. It will say "sport mode" in the multifunction display when you have it right.

I was messing with sport mode recently. I like it on a launch, say, of 3k rpm. It allows the wheels to spin just a little bit before getting them corrected so you can take off. I do not, however, like it engaged when doing a roll. If I drop down low enough to make the wheels spin, it completely bogs down the car. Learned the hard way that it makes you look like a real douche.
