I feel for you man. Last semester I was abroad and no amount of European cars, beer, or girls could replace my lust for American made HP. I barely made it and went through some severe withdrawals (At one point, I even turned to surfing the London underground while intoxicated) but I made it through by living through these guys by proxy and enjoying every pic and vid of their mustang ****.
I have a 4.0 and love it, my dad has a Saleen 281SC and he even salivates over the 4.0, especially the classic pony badging. If I was you, I would get a 4.0 (Spend less cash) and mod it to make it truly yours. FI is always an option if you find yourself wanting more power.
No offense or anything, but the only other people who have EVER driven my car are the guy who did the dealer trade, my dad, and me. Got it new with 35 miles on the odometer, just my dad and I since. No one else. No wife or gf shall ever sit behind the wheel of my pony unless there is immediate and dire need or the car is stationary. If your wife is going to be driving it, 4.0 may be best so she doesn't get herself killed. When my mom got her Jag (A used 08 XKR) my dad and I spent days looking everywhere imaginable for an XK (300 vs. 450 HP) for that very reason. I think the betting pool on how long it will be before she totals it is up to 3k. But anyways if your circumstances change in the next few years and you have serious mod money and can get a 3rd car, you can always go FI or drop a 4.6 or 5.4 in there later. And personally I think the styling on the S197 is way better than the new style. And has she seen candy apple red?
