I'm not sure if the V6 has enough power to exceed 120 mph. I would guess that it probably does but the only way you are going to find out is find a long, deserted stretch of higway and try it. Is yours a manual or an auto? The manual has a numerically lower final drive. At thiose speeds your engine needs RPM's to fight the drag, so I would say that if you've got the manual, hence the numerically higher final drive ratio you probably have more top end. This is assuming that 5th gear ration in the manual and the auto is the same. I'm not sure if it is. So you'd need to check that out also.
In regards to replacing the speedometer. You might be able to use the gauge cluster from a GT but I'm not sure what other changes you'd need to make. It seems to me that 99 miles out of a hundred you will be driving at a speed that is less than 120 so I'm not sure that it would be worth your trouble, but it is likely possible. I would try the car first to se if you even need to bother.

yeah, i went to a car shop today and they said that this v6 should be able to push speeds much higher than what it is topped at..unfortunatly they did not have the speedometer or a tuner lol

with complete stock, my passanger aid that he saw my speedometer hit 115...im not completely sure because i could not just look at my speedometer as i was driving on the S curves on the highway
You can always try using a GPS to clock how fast you are going. All GPS are accurate to about 8m for location. I've used to a GPS to check to see how accurate my speedometer was and it turns out to be very accurate.
This might save you some $$$ and time of instead of installing a new speedometer if you just want to test it.
