I'm in the boat that says...
Why don't you practice driving some more?? What about feathering the clutch on the roll out?? What about some of the other variables that have been mentioned like tire pressure, or actual launch RPM??
Regardless of 7 years of experience, or what skill you may have, I can honestly believe, that if you KNOW that the clutch is not slipping, then you need to practice launching THIS car more... The only other thing that could cause clutch engagement issues is your clutch mechanism (Quadrant, pedal assy, etc)(thanks Brute03

What about the condition of your car otherwise?? What about when you're just driving around town, and jimmy-jam on the gas, does the car bog or screw like what Dan04COBRA was bringing up??

If this is the cobra seen in the picture above ( which I am assuming it is ) not sure what other cars you have raced, but I know that it is quite a learning curve to launch a car with an IRS, and this could be your issue, maybe its not so much a bog but a little wheelhop that you are feeling? I could be totally off but I was suprised that this was not mentioned.
