Let me see if I can clarify... we've got two things here:
Theoretical top speed, and actual top speed...
The theoretical top speed is the top speed determined by math. For 4.10s and a 5th gear ratio of .62 (TR3650), at the rev limiter (6250 RPM) you're doing 187 MPH...
The actual top speed is what your car can actually do... a lot of other factors come into play here, wind resistance, weight, horsepower, etc etc... This is ALWAYS lower than the theoretical top speed, the best way to find out what the theoretical top speed is just to try it... though it's not wise.
Gears will ALWAYS help acceleration, but they will hurt the theoretical top speed (in some cases, the gears may give you the extra boost to bring up your ACTUAL top speed)... getting to your original question, if you had two identical GT's, except one had 4.10s and the other had the stock gears, the one with 4.10s will reach any given speed faster (till you're knocking on the actual speed limits of each).
If it's any proof against gears, I would have got 290-300 miles on my last tank of gas if I didn't fill it back up when it got to 1/4... Stock gears.
I can see how people would want gears, over in detroit where it's populated, most trips are short, and no faster than 35 MPH... 4.10s wouldn't cause a problem there... but over here, in the boonies, trips often last upwards of 25 minutes in one direction at 55+ MPH... 4.10s are clearly not the choice for me, not even 3.73's... The stock gears are plenty. Your actual location and the majority of the driving the car will see determines your gear choice.
