Wow... all the horrible guesses... Seriously, if you don't know, don't make a reply.
It's the low coolant warning light. If your coolant is fine there's a high chance that your sensor just went bad (they seem to go bad pretty often)... this is closer to the case if the problem is intermittent (happens on first start, but when you restart it within a couple minutes the light doesn't show up)... the sensor is on the way out. The fix for it is that you have to buy a new coolant tank, there's no feasable way to replace just the sensor. On your trip just watch the temperature and all should be fine.
If you didn't get MIL eliminators or a new tune your check engine like has like a 99% chance of coming on during your trip... this is "normal" because you don't have any cats... the engine also has a chance of going into limp mode because of it, where the engine timing will be way reduced and it will be adding a lot more fuel... you'll get HORRIBLE gas mileage. This is a sooner-or-later thing, it'll happen aventually, probably within 50 miles... Just something to be on the lookout for so you aren't so surprised when it happens.

it comes on after being driven for a while.. like 15 minutes or so... none of my guages hit the hot marks or anything... so the coolant tank needs to be replaced? my trip is about 10hrs and i dont want to be sittin on the side of the highway..

its a 00 gt problem. It does that in my car too from time to time. Coolent is just fine and so is the whole cooling system. Ive had it checked out a few times. Its just a weird thing about these cars. It does it when it rains a lot too. . . .

i flushed my radiator and that light came on would not go off... i disconnected the sensor plug under radiator dried really well, put it back together went off.... there is a float inside the radiaor right beneath the cap sometimes they stick check into those two things they shut my light off.
