RE: 70mm or 75mm throttle body?
I paid 60 dollars per flowmaster and I got the 40 series. I paid 140 for my off road H which was on sale on a site that is no longer in buisness and was marked down from 160. This shop, which I am now gonna work at, sold me the flowmasters, installed them in place of the factory mufflers, and put in my off road H all for 360 dollars and did a damn good job with the welds. So all together I paid 500 for my exhaust. Girls love the sound of my car and guys ask me what exhaust I have all the time and where I live there is a **** load of Stangs.

Go with the 75mm, you never know if you go with forced induction. Because when I bought my accufab 75mm tb/plenum combo, I wasn't planning on nitrous. But I'm really happy i went with the 75.

75mm..........just put it on last week, took a few minutes driving time but once the comuter kicked in everything was worth it. But if you want to feel a differance CAI,TB/plenum, X-pipe, catback, short throw shifter(mgw). it's all good cuz'

Aereon
I don't think the tuner or the on board computer will care very much about the new TB. Basically the MAF sees more air going in and sends the apropriate signal and the mixture is adjusted.
U can try fidling with the settings to see if it allows you more gains than you already had.

Aside for diferences that are part of the design such as bend radiuses, cross sections of pipe and stuff - For a stock motor the 70mm will favor the bottom end. It will give you a bit more power overall. The 75mm will shift that power increase to a slightly higher rpm. You probably would not be able to tell the diference.
If the motor is very tired you may actually loose power with the 75mm bu this is mostly theoretical stuff .
As JC said: For a motor with future mods including a blower the 75mm is the way to go
