190 stock, don't get anything less your car is meant to run hotter and it will perform better, you put in a 160 your going to run colder and rich unless you get it all tuned right etc.

If you do change the stat, be very careful with the housing. They break very easily.

a little off the topic but you may want to think about 3.73's and a shift kit (all i have different than you is 70mm tb,mac cold air intake, high flow cats, timing advancer (not recommended with tuners) msd coil packs; not ignition, 3.73's, shift kit,no tuner yet).im pulling 14.1 at best, dont get me wrong its a project car(#'s will get better over time) but they sure seemed to liven things up. i have a diablo tuner, suspension, and upgraded brakes i am ordering tomorrow. i cant wait to hook the tuner up!
either way good luck

It`s easy. Just be careful when you tighten down the housing.

Do I just drain it, replace it, and fill it back up?

Another question this made me think of. Is there a place that sells steel braided radiator hoses?

If your just doing the stat you dont need to drain out all of the antifreeze. As for the braided hoses, you can get them through any autoparts store. I would search around on the web for them though. You will probably find them somewhere for a good price.
