Default Over heating?

aight so my car is over heating, the oil is at the correct level, i changed the thermostat(188deg) and the temp sensors, was working fine...then it started to over heat again, so i turned the defrosters on and had the fun turn on perminatly and yet again the car was working for and after about 30miles started to over heat again. I tested the old thermostat and it opend around 180-190, so the old thermostat is good

what could it be?
