My Mechanic said there are 2 sets of shocks on the back of my 01 mustang. He said one was for wheel hop. Is that accurate?

Yes, one's a shock that you'd find in the normal location, the other sits semi diagnally in the rear, most people refer to this as a quad shock. It's garbage, get a heavy duty lower control arm and toss the little bastard.

I was told by Maximum Motorsports to absolutely put my quad shocks back on.

Since I trust them as experts, I am not sure I would remove them. Perhaps a call to them or another suspension company to get another detailed opinion on this.

I just replace it with a standard strut. Would a kyb do the trick.

They have to tell you that for liability reasons. You can eliminate that quad shock completely using the Heavy Duty LCAs. Some people have even taken them off with stock setup and had no problems, but you may experience wheel hop at that point.
