I'm pretty sure the Cobra/Mach1 headrests will fit GT seats but the material and feel of the leather is different. You better off finding ones that came off production GT's with the interior upgrade package I think....I know mine came with them and I have the same type of headrests.

You can order brand new seats from Ford...

By law they are required to carry the parts for at least 10 years.
