How much foot pounds of torque can stock block and drivetrain take?

^^^ There is the full truth, you could have 1,000 horspower and 1,000 ft lbs of torque and run it through a stock rear end and trans with stock tires, and it will never tear anything up short of the 150 MPH burnout you could do. You are not actually making 1,000 hp without the resistance to measure that amount of work being done.

Why don't you try the opposite method...
Get it tuned for 125 shot and run the 100 shot until you get the urge to step up in jets. Get a pull done with A/F with the 100 shot while it is being tuned to be sure it is OK. Then you know your 125 shot is "safe" without having to retune later.
