AFAIK the only reason UPR made theirs a 3-hook unit was to avoid a patent pissing-match with Steeda--I have never heard of anyone using the 3rd hook (the one farthest from the firewall).

OP, the quick release quadrant will noticeably increase the required pedal force--that's the price paid for the quicker release...

Thats the combo I currently use and I like it. It hasn't presented any problems at all.

BTW..you will find a lot of puffery as far as parts manufacturers are concerned. Damn marketing...
