And... I'd boost it, do some gears, and get some nice tires. Run the thing till it won't run anymore, then do a full overhaul and do something along the lines of your DOHC swap...
You may get better information if you provide us with what you want to get out of the car. Is it going to be a fun DD, or is it a weekend car, or are you going to be taking it the track? What kind of performance do you want out of the car, straight line speed or speed through the corners?

Injectors are not specified by psi (though that is a part of it), but rather in units of the maximum number of pounds per hour (lb/h) of fuel they can deliver, at a specified fuel pressure drop in pounds per square inch (psi).
If the pressure is not specified it is generally assumed to be 43.5 psi (3 bar), however Ford operates them at 40 psi so when discussing Ford or Ford specific injectors that is the assumed pressure drop.
