I believe the best ones you could get would be the Percy Seal-4-Good gaskets. You can get them in OEM shape or they have ones that match the flanges on the Kooks headers.
OEM shape: http://www.percyshp.com/store/Seal-4.../prod_448.html
Header flange shape: http://www.percyshp.com/store/Seal-4.../prod_433.html
As for keeping the bolts tight, I tried the Stage 8 ones first and didn't like them. I was then told about something called NORD LOCKS and they are a special locking pair of washers and they are awesome. You use them with the regular bolts that the headers came with and they really work well.
These were the ones I used. You need to get 4 bags since you'll need 16 and of course 5 come in each bag.

I reused as many factory studs as I could. Had to use a few stage 8 bolts where the stud wouldn't clear the header. Also reused the factory gaskets and tossed the composite gaskets that came with the headers. No issues to date.
