Extra weight in a convertible?
Me and my dad were having a talk about gettin a foxbody. I'm findin a lot of convertibles, and I was thinkin the fox has a lot of cars beat because its so light with the 5.0. If one had a convertible the weight of the roof and back winshield would be gone. My dad was tellin me though that a lot of cars add extra weight to the convertibles to the bottom to keep them from rolling over...

It's not to keep them from rolling over, it's extra bracing. I know that on my convertible there is a factory K member brace and some extra bracing hidden inside of the interior. A convertible typically weigh a few hundred pounds more than a coupe.
Not sure how much extra but the convertible foxes are a bit heavier(couple hundred pounds). Still fast as I have a 91 GT Convertible. Also depends what you want it for racing or cruising.

I've got a 91 convertible and a 92 hatch, trust me I know, both 5.0's. The convertible is slower than the hatch, even when the vert was modified it was still slower than my hatch.
The extra weight comes from extra bracing on the chassis to help with body twist due to the roof & primarily pillars are not there for support. However there are many fast verts out there it just takes a little more HP to make them as fast as their non-vert counterparts.
