your 5 degrees added is hardly worth a dyno trip your looking at about 4-8hp with you stated mods in cool weather less in hot
adding hurts MPG
im not tuning the car because of the timing. im getting a baseline with my currently installed mods. however, when i see my a/f ratios ill be able to see if i can go further

advancing the timing lets the fuel/air mixture burn in the cylinder for a longer time, if you are too far advanced, the mix in the cylinder will create too much pressure before the cylinder reaches top dead center, this is called detonation.

so basically you try to set the car to have the maximum amount of gas expandature happen just SLIGHTLY after the piston reaches TDC.. giving you the most HP for what your running. if it happens too late, the gases are trying to expand and catch the piston, if it happens too early... well... DETONATION!

*edit* i can't spell
.
I hate to correct anyone, but detonation is the spontanious combustion of endgasses, youre talking about pre-ignition. but other than that, youre on the money.

EDIT: the only reason I said this is bc we just went over this again in class this week.
