I would stick with the 331. its puts less stress on everything and will last a bit longer.
Todays new tech. stroker kits have come a long way and should be fairly reliable, if put together right.

With 10-13psi of boost AND a 331 you will be poushing a stock 5.0 block to its edge though, maybe beyond.

you can always put a support girdle on too, they're supposed to help with block flex.

if I want to stick with my 5.0 for now should I stroke it to a 347 or 331 . What about high rpm stability how far would I be able to push it or what could I go to and keep it reliable

that girdle helps the crank from walking back and forth.

I'd just stick to a 306 with a turbo. You can split that block with a turbo just as easy on a 306 as you can on a 347. Just buy a set of pistons and use your stock crank and rods. For heads, I'd just use a set of TFS TW or AFR 185s. There's no need for killer heads when you won't be pushing the combo that hard. 13psi through a 306 with either of those heads should get you over 500rwhp with ease.
