80' engine swap

My dad and I want to restore a 1980 mustang LX (holds sentimental value for those who might ask) and was wondering what was the best engine to swap into it. Im looking at more than 500 HP for this mustang. Any suggestions will be appreciated.

I want it with a serious power adder. Preferably a whipple supercharger.

im fairly sure whipple does mod motors only, but hell drop in an 03 cobra motor
