Canfield's make the best heads for the 5.0 but are very very expensive and not easy to find.
AFR makes a great head also. I've seen tests between the AFR and the Canfields and the Canfields edged them out every time. But anyway....
You're going to want a AFR 185 for a 331 or higher (351W or higher get the 205s). 165's for a 302. The problem you're running into is you're getting ahead of yourself. Getting the AFR 185s at this point would probably hinder performance but would save you money in the long run. 165s would give the best power gains at this point HOWEVER when you stroke it won't give the best gains at that point so you will be wanting a bigger head and dishing out more money. Don't get any of the GT-40 type heads. Horrible compared to others. The GT-40Ps are if you're on a budget however with that you're going to need new headers.
You have to decide what's more important to you and what goals you're going to acheive with the motor. I personally say get it stroked and new heads at the same time.
As for horsepower gains I'd say expect to see anywhere from 50-60+rwhp depending on tuning etc.

canefields alittle much imo for a street car - something like afr or edlebrock would be better on a daily driver - would definately perform better in the idle - 6k ~ range over the canefields - which are low velocity heads - not good unless your really winding up

try www.treperformance.com they have AFR 165's for $1279 i believe! That is by far teh cheapest i have ever seen. check it out, they also have other heads too but I think getting the AFR's for teh price of teh edelbrocks sounds like a good deal to me!!
