so you cant spin 210s with 421 ft lbs? there is something SERIOUSLY wrong.

that intake manifold is why you have zero low end. its made to flow from 3500-8000 rpm. i would seriously consider a different manifold, either a weiand stealth or an edel air gap

What torque converter are you running? The torque converter makes all the difference in the world. a friend of mine has a 1985 Mustang with a 12.5:1 347, TFS heads, a 4.56 gear, and an automatic. He can't even do a burn out because the converter is so tight. He runs 7.50s in the eigth at 96 mph. He's ordering a custom converter from ATI now.
