I do it myself quite a bit. Here's what I do (may differ than what others do)
First, make sure it's completely cool. Then I cover all of the electronics with plastic bags, just enough to cover it. Then I get the engine a little wet with a hose. Next I spray soem degreaser / engine cleaner and let it soak. Once it soaks a little I scrub the hard to reach areas and scrub the extra dirty areas and then I rinse it off.
Once that is done, I releat the whole process with "Simple Green" but I don't mix it with anything... I spay it straight on the engine. Then I scrub some and completely rinse it off. Then I just leave the hood up and let the sun dry it. After that it usualyl looks good and smells good

Things that I am wary of include:
Dist. Cap, Coil, alternator, windshild motor, blower motor, MAF, TPS, and starter real hard.
Pretty much anything that deals with moving parts and elec.
They are all pretty safe considering they are made to be exposed to water and humidity on a moderate level..
I do use compressed air and a drive after washing though...
