Default Custom car insurance

Who do you guys have your Stang insured through? Anyone have classic or custom car insurance on their mustang from like Grundy or a local company? AAA is being a dick about telling me what they would consider my car worth. I don't have reciepts for all the stuff on my car and I refuse to insure it without being certain that if some ******* steals it (like they did my Taurus last month) - I won't be out the money I paid for it. What do you suggest?
Sorry for OT post but the opinions I want aren't in the OT threads.

i go through progressive and they said as long as i show them a receipt it will be added in for "value" and they would pay cost of what the car is worth plus what you put into it (of course depretiation on those parts) but you also pay for the extra insurance as well. its really not that much and if your doing alot to your car its entirely worth it.

I went through erie insurance. You can declare what value you want insured for , and pay accordingly. There is a milage stipulation of 2000 a year, or you can pay for more miles up to 5000.
